Recipe : Roasted Root Vegetables with Meyer Lemons & Blood Oranges

The meyer lemon tree outside Chloe's kitchen was loaded with yellow fragrant fruit on her birthday weekend. 
Some slices of meyer lemon and blood orange added an extra layer to a 'signature Chloe dish' 
- oven roasted root vegetables, in this case parsnips and carrots, caramalized to sweet perfection ...

1 lb parsnips
3 lbs carrots
2 meyer lemons
2 blood oranges
olive oil
salt & pepper

half/quarter carrots & parsnips lengthwise.
slice lemons & oranges.
drizzle generously with olive oil. 
add salt & pepper.
mix well to coat.
preheat oven to 375F (190C) and roast 30-40 minutes until caramelizing ...
